FOOD

The food industry is one of Córdoba's most important sectors. The province has approximately 1,500 companies dedicated to food production, all of which stand out for the high quality of their products, excellent logistic systems, the application of technology, and good manufacturing practices.

The firms in the sector produce a wide variety of food products such as candy, sodas, jams and marmalades, pasta, edible oils, cold cuts, spices and seasonings. On top of that, Córdoba has seen the rise of major ventures dedicated to the production of not only gourmet, but also Kosher-, Halal-, and organic-food certified products, which allows them to enter less traditional destinations like Japan and Israel.

Milk production
The Province of Córdoba is the most important milk producing region in the country, and one of the largest in Latin America. With over 2,800 active milking yards, the province's share in the domestic production has grown over the years and currently accounts for 37 percent of Argentine milk produce, which has made Córdoba the main dairy producer.

The province has three extremely important milk producing regions: the Southern Region (area of Huinca Renancó), the Northeastern Region (area of Morteros) and the San Martín Department Region (area of Villa María). The latter contributes 43 percent of the province's milk produce.

The sector is strongly oriented to cheese making. Of the total produce, 60 percent is destined for cheese manufacturing; 30 percent to milk powder, yogurts, puddings and other preparations; and only 5 percent to fluid milk.

Meat Industry
Livestock farming for productive and economic purposes is the second most important economic activity in Córdoba's primary sector. Lately, intensive livestock production (natural resources modified by the producer) has been on the rise, which allows for improved productivity and efficiency.

The province has livestock amounting to 7.8 million head, and is the second largest producer of swine and the third largest producer of cattle.

Hereford and Aberdeen Angus are the main breeds raised in the province of Córdoba for human consumption. There are more than 30 authorized slaughterhouses (4 with Hilton quota) and more than 70 supplier slaughterhouses that take more than one million head per year, which represents 10 percent of the domestic total.

As for swine, there exist 24 authorized establishments that slaughter more than one million head of pigs.

The Province of Córdoba also has sheep, goats and a developed poultry chain.
